Pumpkin Spice with Caramel Swirl Cheesecake

When I moved to the Chicago area I had a few worries. The main thing was meeting new people and making new friends. Luckily I had some amazing friends from my teen years already living here. In fact I moved in with one of them! Even luckier (for me at least) my new roomie doesn’t know his way around the kitchen that well so I get to do the bulk of the cooking and baking.

I know to some that wouldn’t be so much of a good thing, but for me it’s amazing. I’m the happiest when I have people to cook and bake for, it’s where I find a lot of my pleasure in life. I’m by no means the best but I like to think I’m pretty darn good. Something else I’m pretty good at is finding shortcuts in the kitchen. As much as I love to cook and bake I don’t always have the time to prepare everything from scratch.

Kraft Holiday Bake Center

With the holidays quickly approaching I have been looking for a happy balance between being in the kitchen and being with friends. The Kraft Holiday Bake Center at Walmart does a great job of making that happen in a budget friendly fashion. All of the necessities for holiday desserts are there with some extra goodies all at affordable prices.  The Bake Center is actually what inspired this recipe that I’m sharing today. It’s amazingly simple and virtually foolproof – anyone can make it and the beauty is there is no baking involved!

I picked up some of the necessities while I was at Walmart, came home, and whipped up this Pumpkin Spice with Caramel Swirl Cheesecake.It wasn’t complete until I added the white chocolate drizzle on top; then it was perfection.

The first thing I did was melt 1/3 cup of Kraft Caramel Bits in a double boiler.

While my caramel was melting I softened 8 oz. of cream cheese in the microwave then blended that with 1/2 cup of milk. Then I added a box of JELL-O Pumpkin Spice Flavor Instant Pudding. I whisked that all together with another cup of milk.

I poured the mixture into a prepared graham cracker crust and swirled the melted caramel through the cheesecake. Then I put that in the fridge for 2 hours to firm.

Once the cheesecake was firm I melted 6 squares of BAKER’S White Chocolate (in a Ziploc bag) in the microwave. I used 30 second intervals, squeezing the bag to help it melt during intervals. I cut the tip off of the bag and drizzled the white chocolate all over the cheesecake. I put the cheesecake back in the refrigerator for a couple of hours so the chocolate could settle and voila.

That was it, if it sounds simple it’s because it is!

Green Bean Casserole is amazing, especially once you put your own twist on it. I shared my Cheesy Green Bean Casserole with Bacon so now I want to share my awesome way of serving it… with another southern favorite.

Cornbread!

Cornbread is one of the big things I miss about the east coast. I’m sure you could find it somewhere around here but I haven’t yet. It’s one of those homestyle comfort foods that goes well with anything. That’s what inspired me to make this cornbread bowl used to serve the Cheesy Green Bean Casserole in.

The process was easy and not much different from making regular cornbread. The difference was what I baked it in.

I preheated the oven to 400°F. Then I prepared a box of cornbread mix according to the directions and poured it into a small, greased baking dish.

I used an even smaller (well greased on the outside) metal bowl to make the hollow part of the bowl. I placed the metal dish in the middle of the small baking dish and filled it slightly with water to weigh it down. I made sure the metal dish sat on top of the cornbread mixture and not the bottom of the pan.

I put the setup on a cookie sheet and baked it like that for 30 minutes. I carefully twisted the metal bowl out and returned it to the oven for 6 more minutes so the middle could cook through.

After that it was just a matter of filling the bowl with that delicious green bean casserole and serve it up. I’m still working out the details for making individual corn bread cups. As soon as I perfect that I’ll be sharing so stay on the lookout for that.

Green Bean Casserole is synonymous with most holiday dinners. It’s a tried and true dish that is passed down from generation to generation. But do you ever get tired of eating the same thing over and over again each year? I know I do which is why this year I’m adding my own twist to the classic side dish.

Being a country girl there are two key ingredients missing from the traditional green bean casserole. Can you guess which ingredients I’m referring to? Time’s up! I’m talking about cheese and bacon. These are the two ingredients I think every dish should have (within reason, of course.) That’s why I’m adding them to this years festivities.

This recipe is a spin off of the traditional Green Bean Casserole recipe and uses many of the original ingredients. Campbell’s® Condensed Cream of Mushroom Soup is pretty much a must; it’s an easy, everyday recipe I always have on hand. We’ll also be using French’s® French Fried Onions and Del Monte® Green Beans.

But that’s where we stop following tradition!

While the original green bean casserole recipe is easy and yummy it leaves a little to be desired. That desire is fulfilled with the addition of bacon and cheddar cheese. I even used cheddar french fried onions! I did have to stop myself from eating them out of the canister because they are so good! But back to this new recipe. Here’s how to make it.

The first thing is to fry up 1/2 pound of bacon, make it semi-crispy! Reserve 2 tablespoons of the grease and discard (or store) the rest. Let it cool for about 10 minutes and break the bacon into chunks.

Preheat the oven to 350°F.

Combine the following ingredients in a large bowl:

2 – 10.5 oz cans of Campbell’s® Condensed Cream of Mushroom Soup

4 – 14.5 oz cans of (any style) Del Monte Green Beans, drained

1 cup of French’s Crispy Fried Onions

1 tablespoons of butter

2 tablespoons of bacon fat

1/2 cup of half & half

1/2 cup of turkey broth

½ cup shredded cheddar cheese

1/2 teaspoon of salt (more or less to taste)

1 teaspoons of ground black pepper (more or less to taste)

Lightly grease a 13×9 baking dish and pour ingredients in. Bake for 25 minutes. Sprinkle the top with more French’s French Fried Onions and bake for an additional 5 minutes.

Chicken & Green Bean Casserole

What happens when you combine a popular Thanksgiving side dish with a protein? Why you get a full meal, of course! It’s almost Turkey Day here in the U.S. and I thought I would get a jump start on some fun recipes. The first one is this Chicken & Green Bean Casserole with homemade french fried onions. Hello, yumminess!

French Fried Onions

The dish is super easy to prepare. The first thing I did was fry the onions. Slice your onion super thin, soak them in buttermilk for about 10 minutes then dredge them in a mix of flour, salt, and pepper. Deep fry them for 4 minutes or so then remove and drain on paper towels.

In the meantime, you can start on the casserole. Prepare a casserole dish by greasing the bottom and halfway up the sides. I use fresh green beans, but you can use frozen if you prefer. Layer them on the bottom of a casserole dish and pour half a large can of Cream of Mushroom Soup on top.

I use 1.5 pounds of boneless, skinless chicken breast tenders and layer them over the green beans. Sprinkle with salt and pepper and add the other half of the soup over them.

Top with the homemade french fried onions and cook for 45 minutes at 375 degrees F uncovered.

For an extra special treat serve with warm cornbread and sweet potato pie. It will feel like Thanksgiving anytime!
