Homemade Egg Custard Banana Pudding

Breakfast for Dinner

It’s only like the best thing ever! Seriously!!! I’ve been enjoying brinner for as long as I can remember. My mom designated at least 2 nights a month to serve up breakfast favorite for dinner. Scrambled eggs, pancakes, french toast, sausage… and, um, of course the deal sealer: BACON!!! 

Brinner is a tradition I happily carried into adulthood and I’m always finding a reason to have breakfast for dinner. Admittedly I purposely forget to take meats out of the freezer just so I can serve up breakfast. Shhh!Homemade Egg Custard Banana Pudding

Most recently I had a little get together where I invited some friends over to eat brinner with us. Each dish we served had eggs front and center. The first dish was an appetizer – sweet & savory deviled eggs. My roommate and I have differing tastes when it comes to our deviled eggs. She likes hers with salt, pepper and a little kick while I prefer mine with just a tad of sugar. Hence the sweet & savory – hers are at the top with paprika.

Next up we have scrambled egg sammiches with – get this – sausage balls for the buns! Yes, we went there and I will most definitely be going there again, and again, and again.

These were so easy to make; just make your sausage ball recipe but make them a little bigger than normal. Flatten them just a little so when you cut them in half (lengthwise) you have something like a bun. Scramble some eggs, top with a piece of cheese (we used pepper jack for some added oomph) and voila.

Since I am obviously an egg junkie (especially when it comes to Eggland’s Best Eggs) I couldn’t stop with Scrambled Eggs. I had to make my favorite simple desert – Egg Custard! This time I added a twist to it in the form of bananas and ‘Nilla Wafers. Yes, banana pudding without the boxed pudding mix! Homemade Individual Egg Custard Banana Pudding is so much better than the boxed stuff hands down.


Homemade Egg Custard Banana Pudding

  • 1/2 cup (granulated) sugar
  • 1/3 cup (all-purpose) flour
  • Pinch of salt
  • 3 cups (whole) milk
  • 3 large eggs
  • 1 teaspoon of vanilla extract
  • 1 box of Nilla Vanilla Wafers
  • 6 ripe bananas, sliced
  • 1 container Cool Whip


In a medium sized sauce pan, whisk together the sugar, flour, salt, and milk. Whisk in the eggs and cook (while stirring constantly) until the mixture thickens.

Remove from heat and stir in the vanilla.

Start layering wafers, bananas and custard in individual serving dishes - starting with wafers.Repeat until 3/4 full.

Top with whipped cream then garnish with wafers and sliced bananas.
