Last week I teased you about the delicious meal I’m preparing for tonight. I didn’t give you much to go on except suggesting you pick up a box of Cheesy Enchilada Hamburger Helper®. Now it is time for the big reveal;
Cheesy Enchilada Empanadas
I just love the way that rolls of the tongue; seriously – try saying that three times! They are super easy to make and are oh so delicious! I use fillo dough for mine, you can use puff pastry instead if you choose. I just prefer the texture of the fillo even though it’s harder to work with.
Prepare the Hamburger Helper® according to the box directions.
Once it is done set it aside to cool. Take this time to defrost your fillo or pastry dough (according to the package directions) and preheat the oven to 300F.
Lay out between 4 and 6 sheets of fillo, lightly brushing each layer with Extra Virgin Olive Oil. Top with the cooled Hamburger Helper®. You’ll want to put it at the bottom right corner, the picture below is just showing the dough and the amount of Hamburger Helper® to use.
I found this video that will help you fold your empanadas perfectly! Ignore the part where they’re not empanadas… it gives you the general idea 😉
Top ’em off with the prepared sauce that’s included in the box and some fresh shredded cheese.
You just can’t go wrong with these! I am in love with the crunch shell paired with the yummy Cheesy Enchilada Hamburger Helper®. This is one of those meals that tastes like you spent all day in the kitchen when in reality the prep is simple and you have plenty of downtime to do other things.
