My everyday rush consists of dropping kids off, picking them up, being a caretaker for people and pets, work, and checking off the chore list. Add to that the recent (within the past 5 days) 1,000 mile move and free time is something I only dream of. That’s why I take full advantage of cutting corners when it’s time to make dinner.

Walmart #EffortlessMeals

One of my favorite shortcuts to an effortless meal is using Walmart’s Rotisserie Chicken. It’s already cooked so all I have to do is take it off of the bone. You’ll find the Rotisserie Chicken, Marketside Pizza, and sides all in the deli section of your local Walmart. The Effortless Meals signage will let you easily find the products inside the store.

Effortless Meals are a convenient purchase that lets you give your family healthy, fresh options for dinner. Since this is a very busy time for parents this is also an easy way to create a positive mealtime experience for your family.

I’ve used the chicken to make soups, quesadillas, fajitas, and this delicious cheesy chicken casserole I’m sharing with you today.

What I love most about this dish is that it can be made the night before and reheated for a truly effortless meal. The second best thing about this casserole is you can add to it to suit your family’s preference. Olives, diced tomatoes, mushrooms, onions, peppers… go crazy with it – it all works!

Step By Step Directions for Cheesy Chicken Casserole

Bring 4 cups of water to a boil for your pasta.

Once the water is boiling add your pasta (I use 1 lb of rotini) and cook according to the package directions. Preheat the oven to 375F.

While the pasta is cooking, pull the meat from the rotisserie chicken and set aside. I use the bottom of the rotisserie chicken container for the meat and the top for the carcass/waste.

Combine 1 1/2 cup of milk, 6 tablespoons of butter, 2 cups of Italian blend shredded cheese, and 2 cups of Mozzarella cheese in a lightly greased [large] casserole dish. Add in any other ingredients (I’m using corn and bacon pieces) and seasonings (I use 1 tsp. each of basil, garlic powder, oregano, and pepper & 1/2 teaspoon of salt.)

Add the chicken and the pasta and mix well. Sprinkle the top with shredded or freshly grated Parmesan cheese and bake for 20 minutes. If you prefer you can cover and freeze the dish before cooking, just add 15 minutes to the bake time.

It’s nearly impossible to finish this in one meal so you’ll most likely have leftovers for at least another night. So, the next time you’re out shopping, running errands, or picking up the kids be sure to stop by the deli section at Walmart.

Chicken & Green Bean Casserole

What happens when you combine a popular Thanksgiving side dish with a protein? Why you get a full meal, of course! It’s almost Turkey Day here in the U.S. and I thought I would get a jump start on some fun recipes. The first one is this Chicken & Green Bean Casserole with homemade french fried onions. Hello, yumminess!

French Fried Onions

The dish is super easy to prepare. The first thing I did was fry the onions. Slice your onion super thin, soak them in buttermilk for about 10 minutes then dredge them in a mix of flour, salt, and pepper. Deep fry them for 4 minutes or so then remove and drain on paper towels.


In the meantime, you can start on the casserole. Prepare a casserole dish by greasing the bottom and halfway up the sides. I use fresh green beans, but you can use frozen if you prefer. Layer them on the bottom of a casserole dish and pour half a large can of Cream of Mushroom Soup on top.


I use 1.5 pounds of boneless, skinless chicken breast tenders and layer them over the green beans. Sprinkle with salt and pepper and add the other half of the soup over them.


Top with the homemade french fried onions and cook for 45 minutes at 375 degrees F uncovered.

Green Bean and Chicken Casserole

For an extra special treat serve with warm cornbread and sweet potato pie. It will feel like Thanksgiving anytime!

  • 1 pound fresh or frozen green beans
  • 1 large can cream of mushroom soup
  • 1.5 pounds boneless, skinless chicken breast tenders
  • 1 cup french fried onions

Some nights you have no clue what to cook for dinner. Last night was one of those nights. I had partially frozen chicken breast and some other things to go on. Without thinking, I started dicing the chicken breast into small pieces. I love cutting partially frozen chicken, it comes out perfectly!

Thinking about what I had to cook with it I spotted a bag of craisins. A craisin is like a raisin but with cranberries instead of grapes. In other words, awesome!

I had herbs and spices galore with some random veggies floating around. It didn’t take me long to realize I needed to combine the craisins with the chicken. I usually do a chicken salad with craisins but last night was chilly so I wanted hot food. This is what I came up with.

Cranberry Chicken and Wild Rice with carrots. The taste of this dish was out of this world. The sweet and tart flavors went so well with the chicken and rice. Wild rice is the best rice in my eyes; I just love the texture and the colors!

The chicken was moist and in perfect proportions. It was a complete meal in one pot! How’s that for simple?

For an accidental creation, this was a delicious meal that I just have to share with you. It’s well balanced, full of goodies and even the pickiest eaters will love it.

So what all is in it?

It is boneless, skinless chicken breast cubed. There’s a cup of wild rice; a cup of craisins, a small yellow onion diced, 2 carrots diced, 2 sprigs of rosemary and sea salt. Of course, there are seasonings too which actually bring it all together. Oh, and wine 🙂 Well, Marsala to be exact – it added that little something that was missing. Don’t worry, the alcohol cooks off.

  • 1 medium onion, finely diced
  • 2 small carrots, chopped into small pieces
  • 2 sprigs fresh rosemary (or 2 teaspoons dried)
  • 1 teaspoon thyme
  • 1 1/2 cups water
  • 1/2 cup Marsala or other red wine
  • 1 cup wild rice
  • 1 cup dried cranberries (or fresh)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon dry mustard
  • 1 pound boneless, skinless chicken breast, diced into 1/4 inch pieces


Sautee the onions, carrots, rosemary, and thyme over medium heat (in a medium saucepan) until the onions are translucent.

Stir in the water, wine and wild rice and bring to a boil.Allow to boil for 15 minutes then add remaining ingredients.

Reduce heat to medium-low and cover. Cook for an additional 20 minutes, stirring occasionally.

Grilled Honey Ginger Cornish Hens #Grill4Flavor #CollectiveBiasMemorial Day weekend is upon us and these 4 days are just what I needed to kick off my shoes and head out on the deck to do some grilling. This time around I wanted something different. Something you don’t normally see cooked on the grill. Cornish Hens! I remember having Cornish Hens several times as a child but haven’t tried making them since. I decided to try my hand at it, starting with spatchcocking.

Spatchcocking is the method for preparing small game birds for cooking/grilling. Think of it like butterflying. This process is pretty straight forward – find the back bone and cut it out. Then flip the bird over, locate the breastbone and cut the cartilage to remove it. Once you’ve done this your bird is spatchcocked. I just love typing that, one more time – spatchcocked. Okay, it’s out of my system.

The next thing I did was make a marinade for the Cornish Hens.  A yummy, Honey Ginger marinade. I love all things with an Asian feel and this sounded so divine. And it was so simple to throw together. 1/2 cup Kikkoman Soy Sauce, 1 cup honey and 1 1/2 tablespoon of ginger. Mix it all together in a large bowl and voila. I dredged the Cornish Hens through the marinade and placed them in a roasting pan to absorb the goodness for 6 hours (in the fridge.) Then it was time to get grilling. I probably should have tucked the wings in, but they have so much more personality this way!

I grilled them, flipping once, until they reached 165° internally. It took about 20 minutes all together. I used the reserved marinade to brush the Cornish Hens after I flipped them. The flavor is out of this world. The ginger and honey made it taste so good and you could definitely feel the Asian inspiration. I used white rice and beer glazed broccoli to accompany the hens. It was definitely a feast fit for 2.


Everything I needed was found at Walmart. The Tyson Cornish Hens were in the center section of the meat department. You know that long container thing that they have meats in? They came in twin packs for added convenience. Now that it looks like the warm weather is here to stay it’s time to start using the grill regularly. Being outside on a beautiful day is one of my favorite things. Even more so when I have great friends to enjoy it with. This weekend I decided to invite some friends over for a cookout featuring Tyson Grillin’ Wings as an easy party food. I was able to find the Tyson Grillin’ Wings in the Frozen Foods section at Sam’s Club.

I love shopping during this time of year. Everything looks so good, especially the produce. I thought about making a BBQ sauce to go on the Grillin’ Wings but after seeing all the great, fresh produce I was excited to make a Pico de Gallo. They’ve done the hard work for me and I can sit back and bask in the beautiful sunshine. These wings come in a huge 60 oz. bag at Sam’s Club so there’s plenty to go around.

Pico de Gallo is easy to make, it’s pretty much just an authentic Mexican salsa. Perfect for the upcoming Cinco de Mayo celebrations. I made mine using

  • fresh tomatoes (diced)
  • green peppers (diced)
  • onion (diced)
  • fresh cilantro (minced)
  • minced garlic cloves
  • a squirt lime

I did make a homemade BBQ sauce too – for my friends who aren’t into veggies (I’ll convert them yet!) and they all raved about it so I’m gonna share the recipe with you. It’s a delicious sauce and easy to make. Oh, it’s budget friendly too! This homemade BBQ sauce uses items found in most kitchens and pantries.

  • 1/2 cup ketchup
  • 1 teaspoon prepared mustard
  • 1 1/2 tablespoons Worcestershire sauce
  • 1 tablespoon white vinegar
  • 4 tablespoons brown sugar
  • 2 teaspoon garlic powder
  • Pinch of salt
  • 2 dashes hot sauce (optional)


Combine all of the ingredients in a medium sized sauce pan. Bring to a boil and simmer for 10 minutes, stirring occasionally.

Bring to room temperature before brushing on your meat of choice.

Pair Tyson Grillin’ Wings with a cool glass of Country Time Lemonade or Iced Tea and you have a lunch or dinner fit for friends and family. I can’t think of anything that could have made this day better for us!
