Philly Mac & Cheese

Between the 95+ degree weather and the AC being on the fritz I’m doing everything I can to not have to cook. I take advantage of days like today, when the wind is blowing and the temperature is in the mid to low 80’s, to get my cooking done for the week.

I’ve had some help planning this weeks menu with the help of Food Lion’s new Recipe portal.


Food Lion Submit a Recipe

I found all kinds of delicious recipes on Food Lion’s newly updated website. There are several ways to filter the recipes including:

  • Filter by cuisine type (Asian, Italian, Mexican, etc..)
  • Filter by main ingredient
  • Filter by meals (breakfast, brunch, lunch, etc..)
  • Filter by Lifestyle (cooking for two, gluten free, vegetarian, etc..)

There are even more ways to filter so you can find the recipes that anyone you serve will love. Once you find a recipe you love you can check off the ingredients and add them to your shopping list!

My favorite feature by far is the ability to add your own recipes. I did it and it was so easy! You can see my Philly Mac & Cheese recipe on the Food Lion website.

Clicking on the heart by any of the recipes will save them to your Food Lion ‘My Recipes’ account. This makes it easy to save recipes to come back to later and add them to your meal plan!

So, how did I come up with this Philly Mac & Cheese idea? Well, I walked through every aisle in Food Lion while I was shopping. This is normal for me and how I get inspired. The first stop was the produce aisle where I found the Sliced Fajita Medley.

Then I found a package of shaved beef that was just calling my name. Farfalle, Pepper Jack Cheese and a few random ingredients later and I had the brilliant idea!Philly Mac and Cheese Ingredients

I bought enough ingredients to double the Philly Mac & Cheese recipe so I could freeze half of it for later.

Spicy Havarti Cheese Ball Recipe with Arla Dofino Cheese

Cheese is one of those things you either love or you hate. There really isn’t an in between no matter what you believe. I have known a few people who detested cheese and it is safe to say I no longer associate with any of them. Not because of their cheese hatred, but still. Recently the folks from Arla Dofino provided us with some coupons to pick up their cheese and try it out. I went out to Walmart and they only had two varieties – Havarti and Havarti with Dill. I’m not a fan of dill so I grabbed a couple Havarti wedges and came home to create some yummy things.Arla Dofino Havarti Cheeseball

I made a delicious Alfredo sauce using the Havarti, which melts beautifully. Of course I didn’t take pictures because, well, I’m lame. I’m still kicking myself over that and promise to get that recipe to you ASAP. I did, however, get some decent shots of this easy Cheese Ball that has the Arla Dofino Havarti front and center. This is a basic cheese ball recipe so it is super simple to make. That does not mean it isn’t huge on flavor because it is and the spicy nuts help ensure that. The spiciness of the nuts plays so well with the creamy richness of the Havarti cheese. It will surely be a hit at your next gathering.Arla Dofino Havarti Cheeseball s

Arla Dofino has amazing cheeses and I can’t wait to try all of their varieties. I am a cheese lover, after all. You can find Arla Dofino cheeses at a grocer near you (Target, Walmart, Costco, BJ’s and Sam’s Club stores). To find a specific place that offers Arla Dofino you can use the store locator.

Here is the recipe for my spicy Chipotle Havarti Cheeseball

Spicy Havarti Cheese Ball Recipe with Arla Dofino Cheese

  • 1 8 ounce package softened cream cheese
  • 1 8 ounce chunk of Creamy Havarti
  • 1 tablespoon white wine or whole milk
  • 2 teaspoons garlic
  • 1 teaspoon basil
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1 1/2 cups crushed chipotle peanuts + 3 tablespoons


Place the cheeses in your stand mixer (or use an electric mixer) and mix on medium-high speed until creamy. Mix in the wine or milk.

Add in the seasonings and 3 tablespoons of crushed chipotle peanuts.

Mix until thoroughly blended then place the mixture in the fridge for at least 30 minutes or until firm.

Shape the mixture into a ball and roll in the remaining chipotle peanuts.

Serve with crackers.
