Chicken & Green Bean Casserole

What happens when you combine a popular Thanksgiving side dish with a protein? Why you get a full meal, of course! It’s almost Turkey Day here in the U.S. and I thought I would get a jump start on some fun recipes. The first one is this Chicken & Green Bean Casserole with homemade french fried onions. Hello, yumminess!

French Fried Onions

The dish is super easy to prepare. The first thing I did was fry the onions. Slice your onion super thin, soak them in buttermilk for about 10 minutes then dredge them in a mix of flour, salt, and pepper. Deep fry them for 4 minutes or so then remove and drain on paper towels.

In the meantime, you can start on the casserole. Prepare a casserole dish by greasing the bottom and halfway up the sides. I use fresh green beans, but you can use frozen if you prefer. Layer them on the bottom of a casserole dish and pour half a large can of Cream of Mushroom Soup on top.

I use 1.5 pounds of boneless, skinless chicken breast tenders and layer them over the green beans. Sprinkle with salt and pepper and add the other half of the soup over them.

Top with the homemade french fried onions and cook for 45 minutes at 375 degrees F uncovered.

Green Bean and Chicken Casserole

For an extra special treat serve with warm cornbread and sweet potato pie. It will feel like Thanksgiving anytime!

Ingredients

  • 1 pound fresh or frozen green beans
  • 1 large can cream of mushroom soup
  • 1.5 pounds boneless, skinless chicken breast tenders
  • 1 cup french fried onions
  • salt & pepper to taste

Instructions

Preheat the oven to 375F

Easy Chili Casserole RecipeYou could probably use canned chili (yuck), but my chili recipe is so easy you wont have to. One thing you want to ensure is that you have a thick chili. If not you’ll have soggy corn chips which are just kind of gross, ya know, unless you like that.

Ingredients

  • 5 cups of thick chili
  • 2 bags of Corn Chips
  • 16 oz. Sharp Cheddar Cheese

Instructions

Preheat the oven to 400F

Layer the bottom of a casserole dish with Corn Chips

Spread an even layer of chili over the corn chips.

Add a layer of sharp cheddar cheese.

Repeat until you fill the casserole dish.

Bake for 45 minutes and serve with fresh guac, cornbread or your favorite chili accompaniment.
