The first dish I made was the Seared Pork Medallions with Rhubarb Chutney and Sauteed Freekeh. I had never worked with Rhubarb or Freekeh and I’m not a fan of asparagus. With that said, the dish came out incredible. My roommate and I couldn’t believe how delicious this meal was. The Rhubarb Chutney was a bit intimidating for both of us. We had never had anything with rhubarb and it wasn’t very attractive; but oh my goodness… it was yum. It pulled the entire dish together. Incredible!!

Seared Pork Medallions with Rhubarb Chutney and Sauteed Freekeh The freekeh was very interesting, and I really enjoyed the texture. The only issue I had with this dish was I forgot the thyme; I tend to get ahead of myself when I’m cooking. Kind of like people that have a tons of screws left over after putting something together.

I’ll preface what I’m about to say with I don’t like fish. Can’t stand the stuff normally. Because of that I was extremely hesitant to make the Maple & Ginger Glazed Salmon with Watercress & Parsnip Salad. You can not imagine how happy I am that I made this. Of the 3 meals this was my absolute favorite. Not so much for the salad, but the salmon was out of this world good.

There was no fishy taste which was the first bonus. The maple and ginger flavor blew me away. Like I want to eat this every night for the rest of my life.

Lemon-Parsley Chicken Thighs with Squash & Zucchini Salad and Red Quinoa

The Lemon-Parsley Chicken Thighs with Squash & Zucchini Salad and Red Quinoa was probably my least favorite. I’m not a fan of dark meat so chicken thighs fall to the bottom of my foods I love list. The zucchini salad, however, was really good. I somehow managed to burn the quinoa too. Not sure what I was thinking that night! My roommate did enjoy this dish so it’s all a matter of personal preference.

My roommate and I are both in love with Blue Apron. The directions are so simple to follow from start to finish. If you enjoy cooking with fresh ingredients then you will definitely love Blue Apron as well. Even if you’re a beginner in the kitchen you can’t go wrong. One thing I absolutely love is there is no “waiting” while you’re cooking. The directions keep you busy the entire time (which is why I can’t figure out how I burnt the quinoa!)

I think Blue Apron would be perfect for anyone in newer relationships. Show off  your skills in the kitchen even if you have none! You really have to check out Blue Apron.
