I may be a little obsessed with cobbler… just a little 🙂
Remember when I shared my Apple Cobbler recipe?
It’s so tempting to eat an entire cobbler that I had to find a way to stop myself. Portion control, Amber. Portion control. That’s why I started making individual cobblers.
Or cobbler cupcakes.
Or heaven in a muffin tin.
Or just plain delicious… Call them whatever you want!
By making the individual mini cobblers I have a higher chance of not eating the whole cobbler. I’m not saying it’s impossible though so don’t hold it against me
when if I eat more than one.
So, let’s get down to business and learn to make individual berry cobblers.
The first thing you’re going to do is preheat the oven to 350F. Now line your muffin tin with cupcake liners. This isn’t something you have to do but it makes cleanup and storage a lot easier.
Now melt a stick of butter in the microwave. Yes, an entire stick (1/2 cup). Pour a bit of the melted butter into each cup, trying to keep them as even as possible.
Once that’s done you’re going to mix up the cobbler batter which is super simple: 1 egg, 1 cup of sugar, 1 cup of flour, 1 cup of milk, 2 teaspoons of baking powder, and a pinch of salt.
Mix it up really well and pour into the cups – about 3/4 full. Don’t mix the butter with the batter!
Now top the batter with a few berries; I use a mix of strawberries and blueberries but you can use whatever berries you prefer. Be generous with the berries now!
Finally, add a couple chunks of cream cheese on top of the berries.
Put them in the oven and set a timer for 40 minutes. Check on them at the 40 minute mark and if they aren’t crispy/brown let them bake for 5 more minutes. Keep this up until they are a beautiful golden color.
Remove them from the oven once they’ve achieved the perfect tan and let them cool as long as you can before enjoying.
These go perfect with vanilla ice cream!
