Summer is an awesome time to relax and unwind. It also has a tendency to throw us off our routines. Getting back on track can take some time, especially when it comes to finding time for family dinner. Lucky for us there’s help for that and it’s available at your local Walmart!

Cheesy Stuffed Smithfield Marinated Pork Tenderloin

Smithfield Marinated Pork takes effortless meals to a new level. With so many varieties and infinite possibilities you can whip together a meal the entire family will love. One of our favorites is this easy cheesy stuffed marinated pork loin. It’s huge on flavor and the best part is you can make it over and over with the different flavors of Smithfield Marinated Pork!

First let’s preheat the oven to  400°F.

To get started we’re going to cut the tenderloin down the center (lengthwise – do not cut in half, we just want to butterfly the tenderloin) and place it on a piece of wax paper. We’re going to place another sheet of wax paper over the tenderloin and pound it out flat, about 3/4 of an inch thick.

Now we’re going to add the filling. For this you’ll use your favorite prepared stuffing and cubes (or a couple handfuls of shredded) cheese. I like to use American or Gouda but you know what your family likes, go with that! Spread a thin layer of stuffing over the flattened tenderloin and cover with cheese.

Roll the tenderloin up (yes, like a jelly roll) and secure with twine or toothpicks. Place it in a shallow baking dish and bake for 30 minutes (or until a meat thermometer registers 160°F.)

Let the roast sit for 5 minutes then slice into medallions. Serve with your preferred veggies and you have the perfect dinner!

Smithfield Marinated Pork is my favorite way to get back into the back to school routine. It makes a great back to school dinner and I haven’t heard any complaints yet!

Ingredients

  • 1 Smithfield Marinated Pork Tenderloin (your choice of flavor)
  • 1 box prepared stuffing
  • 1 1/2 cup cheese (your choice), cubed or shredded

Instructions

Preheat the oven to 400°F.

Butterfly the tenderloin down the center (lengthwise) and place between two sheets of wax paper. Pound flat to around 3/4 of an inch thick.

Spread a thin layer of prepared stuffing over the meat and top with cheese. Roll up and secure with twine or toothpicks.

Cook in a shallow baking dish for 30 minutes (or until a meat thermometer registers 160°F.)

Let the roast sit for 5 minutes then slice into medallions.
